So, in case anyone in Laura's family is wondering if I am taking care of her well, here are some pics of some of our meals with descriptions of the dishes I/we made. Many of you may not know this, but I very much enjoy cooking.
Robert's Garbanzo Bean Stew: Bacon, Garbanzo Beans, Spinach, Sweet Red Peppers, Stewed Tomatoes, Garlic, Onions, Spicy Red Chili Peppers, Olive Oil, Salt, Pepper, Bay Leaf, Italian Herbs.


Another Robert Specialty: Mushroom and Spinach Enchiladas. Smothered with cheese and green chile sauce. Rice on side.
Stuffed Italian Chicken. White Breast Filet stuffed with Parmesan Cheese, Sun-Dried Tomatoes, Garlic, and Italian Herbs. Baked and served over Rice.
On our anniversary, Laura brought me breakfast in bed. Altough I did not remember to take a photo until it was almost all gone, here is the last bite of the blueberries, strawberries and almonds with yogurt and sweet cream.
Cheeseburger and Fries. Side of spinach salad.
15 Aug, 2009: Pizza Night! So on August 15th, we planned a very special day that involved lots of relaxing, spending time together, and doing all our favorite things. We decided that for dinner we would have pizza. It was a grand success!


Laura's Pizza (Bottom): Spicy Homemade Pizza Sauce, Shredded Gouda Cheese, Green Olives Stuffed with Garlic, Sun-Dried Tomatoes soaked in Olive Oil and Spices, Artichoke Hearts, Mushrooms, Onions, Leeks, Cabbage.
Rob's Pizza (Top): Homemade Pizza Sauce, Lots of Shredded Gouda Cheese, Green Olives Stuffed with Garlic, Sun-Dried Tomatoes soaked in Olive Oil and Spices, Artichoke Hearts, Mushrooms, Grilled Chicken.
16 August, 2009: Garden Pasta
Homemade Garden Pasta Sauce: Diced Tomatoes, Onions, Garlic, Olive Oil, Leeks, Greens/Cabbage, Fresh Parsley, Fresh Basil, Green Olives Stuffed with Garlic, Sun-Dried Tomatoes soaked in Olive Oil and Spices.
I have two observations from this pasta that I would like to pass on:
1. Pasta is properly made by throwing everything you have in your garden/fridge into a pot and cooking it. Think about it. Traditionally, whatever seasonal vegetables (tomatoes, garlic, onions) people had, they just threw them together and made pasta sauce. Tomatoes, garlic and onions all are harvested at the same time and produce a large harvest. Throw in fresh garden herbs and voila!
2. Although some people like to think of certain things like Basil, Oregano, Parsley, Garlic, etc as "seasonings" in pasta sauce, that is junk. It is best to think of them as ingredients and thus just use a whole lot of them.

MMHMMmmmm. Yummy!

My plan is to work with a sustainable energy company and learn more about solar and wind energy. I am fascinated that the Netherlands is going above and beyond with renewable energy. Amsterdam is presently installing smart grids around the entire city.
